Potjiekos is a South African favourite that you simply can’t go wrong with and this delicious Lamb Potjie is an absolute winner!

Ingredients:

1kg Lamb Shank chopped up or Lamb Knuckles
1 Large Red Onion, chopped
2 Cloves Crushed Garlic
1 Tin Chopped Tomatoes
1 Cup Red Wine
1 Packet Knorr Country Hot Pot or Oxtail Soup Packet Mix
Baby Onions
Baby Potatoes
Baby Carrots
Button Mushrooms
Patty Pans
Baby Corn
Olive Oil
Salt and Pepper

How:

Add enough olive oil to cover the base of the potjie pot and heat.  Add the chopped onion and garlic.  Add the lamb and brown and close the pot and allow to simmer for about 10 minutes.  Add the tomatoes and wine, close and simmer for about another 10 minutes.  Add the Knorr mix mixed into a cup of water and add.  Add about another 2 cups of water, close and allow to simmer for about another 45 minutes.  Add the Poatoes and Onions and carrots  and more water if needed ,close and simmer for another half an hour.  Add the remaining ingredinets and more water if needed, close and simmer for the last half an hour.  At all stages do not mix.  Remove from heat and allow to settle in the pot for about 15 minutes. Serve with rice or mashed potatoe.
